Sriracha is great for a lot of things, but the flavor profile doesn't always match foods. My personal favorites are Cholula, El Yucateco (all flavors), Tabasco, and Crystal (Louisiana style).

Hot sauce should only be a hot pepper + vinegar + a little salt and perhaps some other spices such as garlic.
