I'm a lazy faggot so I just roast it with some salt. It's pretty good. If you want to be fancy shove a hot lemon and some thyme up its asshole, but why bother

i brine them for 10 minutes, oil them lightly on both sides, rub em down with plenty of montreal chicken spice, bake at 400 then let em sit covered with tinfoil for another 10-15 or so

Not the *most delishus evar* recipe but pretty damn good: Poke bird full of holes (a lot of holes) fill each hole with a piece of garlic. Bake per usual method. Can do with tits & thighs as well.

Browning and finishing in the oven (tits/thighs/legs) and making a pan sauce is about the best you can get out of a bird parts, as many variations as music that can be made on 88 keys

3 tbsp Olive oil
1 tsp Herbes de Provence (thyme or Italian blend may work)
2 tbsp White wine vinegar
1 tsp Salt
4 Garlic Cloves minced/finely chopped

optional:

Liquid piri piri hot sauce to taste (approx. 2tsp)

mix well

Use Jacques Pepin recipe for application instructions and cooking.

it's such a small bird that i just makes the chicken super salty for no reason, if you don't over cook it (take it out of the oven at 160) it doesn't need brine

if you must, marinade it in lemon juice or something similarly acidic for 30 minutes or so, it will have an actual impact on the texture of the meat rather than just ultra saturating it with saltiness
