These are the base recipes, but I'm going to make a few tweaks.
Dijon
2 cups dry white wine
1 large onion, chopped
3 garlic cloves, minced
1 cup mustard powder (4 oz)
3 tablespoons honey
1 tablespoon vegetable oil or 1 tablespoon canola oil
2 teaspoons salt
Dark Ale Mustard
3/4 cup brown mustard seeds
1/4 cup yellow mustard seeds
1 cup dark beer, or as needed
2 cloves garlic, minced
1/2 cup apple cider vinegar
2 tablespoons brown sugar
1 teaspoon salt
1/2 teaspoon ground black pepper
Sweet and Spicy Mustard
1/2 cup mustard powder
1/4 cup plus 1 tablespoon light beer or water
2 tablespoons white wine vinegar
1 medium garlic clove, minced (about 1/2 teaspoon)
2 tablespoons packed dark brown sugar
2 teaspoons honey
1/2 teaspoon kosher salt
if you want a very vibrant "mustard" yellow color add some tumeric powder
I haven't made enough varieties to be sure of this but apparently the temp of liquid used before adding the vinegar in your last 2 recipes and the amount of time before adding the vinegar will affect the spiciness (colder=spicier & less time=spicier. I've done one with cold beer which ended up very spicy
