Does anyone here make their Nacho cheese dip or similar themselves and if yes how do you go about it?

first I roast two or three jalapenos and peel the black skin off. and get rid of the seed. chop them up
then I put a bit of butter in a pot and sweat some chopped onions add the jalapenos and some cumin. cook for a couple minutes
add some milk and heat it up some. when it's hot enough to melt the cheese turn your burner to low or medium low and start adding white american cheese a few slices at a time and stir. keep adding cheese and more milk if needed.
I finish mine with a little cilantro, not much but enough to barely taste it
just don't add to much milk or you might have to use a corn starch slurry. but add the amount to give your the texture your looking for
this is great on quesadillas, omelets, tacos too. remember to squirt some lime juice on your goods to maximize that meximarican flavor
