what's a good way to get a serving or two of veggies cooked quickly to add to my breakfast?
I'm not getting enough veggies in my diet and I think adding some to my breakie is the best way to get it done

Blanch your vegetables the night before and put them in the fridge. Then in the morning you can do whatever you want with them and it will be very quick.
Just add a salad. Buttered toast with omelette and salad is my go to every morning
Well, what type of vegetables do you like? Apples, lettuce, grapes, carrots, kale, potatoes, Brussels sprouts?
Consider a salsa with egg dishes if you're into that. Onion/spinach/mushrooms to omelettes.

Chop up a bunch of greens and cook them in your omelette, even better. Spinach, cheddar & bacon omelette is god-tier

Smoothies. Blend up a big one with a bunch of nutritious shit in it (I pack mine full of spinach), and a lot of tasty fruit. Then either fridge or freeze it, and have a glass with breakfast every morning.
