I do both.

But sometimes I forget I need to make more and eat the marrow. It's really only the bones from thighs and legs that I automatically eat without thinking.

Thigh bone marrow > spine > everything else.

If you want white chicken stock they need zero prep.

If you want dark chicken stock then roast them in the oven until golden brown.
