Two reasons:
- Savoury has never been considered a basic taste in western culture, while umami was always a basic taste and Japan spent the latter part of the 20th century proving it scientifically.
We adopted umami as a basic taste in recognition of that scientific proof.
- Savoury and umami are not directly analogous anyway, so translating umami as savoury is incorrect.
