This is a good answer. Id also say try Allrecipes.com, it is pretty good for beginners, its where I started. You could also ask some of your family or coworkers to share their favorite recipes with you, even if it sounds like a dish you wouldnt eat, just make it anyway and then share it with them for their opinion (if its their fave or best dish theyll know best how its supposed to taste) Another thing I wanna say is dont get discouraged. Like, I couldnt get roux at first and kept burning it and I felt like an idiotic failure, but eventually, was able to master it.

Deserts can be extremely difficult but Bruno Albouze is probably the best on youtube.
When I was still retarded I liked following recipes that relied heavily on 1 or 2 techniques and repeated them until I was happy with it. Making ratatouille a couple times will really help your knife skills. Eating sauteed vegetables for a week straight things like that.

I like thai food by david thompson. You have to realise though that in order to make proper thai food you're gonna have to put some effort into getting the right ingredients and it might be impossible depending on where you live.
