Mainly because I can buy them right down the street at a market, and since it doesn't take very much per recipe, I'd rather just buy a jar when I need it than find a place to store the homemade preserved lemons. That said, nothing wrong with making them yourself, they're essential for a lot of middle eastern, moroccan, and north african recipes.

My family pickles it the Vietnamese way. We make lemonade out of it and it's just delicious because it's salty and sweet.
We make these at work for a sauce. Sour as fuck and the taste is strong, but it makes the sauce

Preserved lemons have an intense flavor which is different from regular lemons. That's like saying "I don't make my own sauerkraut because I can buy cabbages for a dollar."

Stop looking for validation OP, no one cares if you preserve lemons in your spare time.
