The most important thing when it comes to making anything that involves baking, is to take your time. Set aside like 3 hours for making macaroons. If you finish early, great, but don't rush--or you'll fuck up proportions or miss an ingredient and then your end result will suck.
Id say find a good recipe which uses italian meringue like pierre hermes. And stick with it. Use troubleshooting guides to check your techniques and slowly calibrate the cooking temp/timing to your oven.
Italian meringue recipes are a lot more consistent with results. And macarons is a recipe that relies a lot on the baker's experience and calibration of the oven. Instead of changing recipes whenever it goes wrong, choose a good recipe where loads of ppl had success with. And stick with it. Lowering temp and increasing cook times. Practising folding and slowly learning the right consistancy to shoot for when folding.
