I love latkes (and they freeze and reheat well). A grate of onion makes all the difference. Can also be made with leftover mashed potatoes. Mashed potatoes leftovers can also be stuffed with picadillo, olives, and breaded and fried like scotch eggs "papa rellenos" are so good. Savory and great texture.
Got some knife skills? Hasselback potatoes are fun, as are pommes anna.
If they have nice clean skins and good uniform size, baking them, and scooping them out and making either stuffed, or potato skins is another fun thing to do, especially with all the toppings. Both freeze well also.
Pierogies are good and freeze well if you can't eat all the potatoes before they go bad.
Mashed potatoes can be used as a topping for shepherd's pie
Although desu when I have a ton of potatoes I just end up making a lot of roasted potatoes and eating them as a meal.

This. It's the best potato salad ever. But you have to have a GOOD recipe. I'd look over several from good websites before you make an attempt.
Potato, raw onion, freshwater fish, peppercorn and bay leaf soup. Boil potatoes, add everything else during last 5 minutes.

If you're worried about them going bad, make a huge pot of mashed potatoes and freeze them in portions. You could also make a massive "loaded potato casserole" and freeze portions of that.
God I love potatoes but its just too damn fattening. My portion control goes out the window.
