Gonna make my first batch of perogies next weekend. What is the most superior filling to use?

In my opinion, potato and fried onion is the best, followed by mushrooms, and then sauerkraut. In Poland I don't think they use cheddar cheese/potato in perogies as it's not "authentic" but it tastes good none the less.

Spiced potato is good.
Ground pork or chicken cooked with sunflower oil, salt, pepper and chopped onions.

Cabbage
Weirdly enough I actually think cabbage perogies more than cheese ones. My grandma is Polish and always makes them with either farmer's cheese or cabbage and cabbage just ends up tasting better every time.

Wild boar and shallots
Normally I do
1.Dry cottage cheese and potato
2. Sharp cheddar and potato
3. Kapusta (sauerkraut and onion fried in butter basically, sometimes with meat)
I never fry them as hard as OP's pic though, usually boil and then very lightly fry in a pan just enough to make a brown color
