Is there a consistent difference between Thai red/yellow/green/etc.

Yes though I have no idea what exactly it is. Someone else can better explain why. My local Thai place makes different varieties and they are all noticeably different.

Red by far imo. It's usually spicier and seems heartier.

I think by "consistent difference" he means consistent between restaurants. Is the red curry different from the green curry at restaurant A the same as how the red curry is different from green curry at restaurant B?

And your second answer that red is "usually spicier" (implying that it is not always the case) would indicate the answer to that question is no.

In Thailand the order from mildest to hottest is usually

Massamun < Yellow < Panang < Red <Green

and sometimes that carries over to western restaurants, but most of the places on the east coast offer a selection of heats, which means they start with a mild curry and then dump chilies in if you ask for hot, which isn't as good as making it authentically to start.

Green is always my first order at a new Thai place to judge it.

green/red are made by smashign up peppers, galangal, shrimp paste, shallots, lemongrass etc

yellow is actually amde with spices and most of the stuff above excluding peppers
