What cheese do you boys use with cheeseburgers? For me it's the pepper jack, but I want to try something else that's different but not different for the sake of being different
Colby jack is cheap and melts well, just like pepper jack. For something runnier upon melting, go for an aged cheddar. Soft cheeses can be decadent on burgers, especially if it's made out of lower fat meat like bison. Goat cheese on lamb burgers is also good.
Havarti rocks.
Muenster cheese is a good choice too.

Depends on the burger
I like roquefort with spicy burgers
Old gruyere with sourdough bun, bacon, and minced rib eye is tasty
Aged or flavoured cheddars can be a lot of fun and very versatile
Oh and crowdie is excellent if you can get it right
And comte is excellent as a sub for American 'cheese'
I have always found gouda and/or provolone go rather nicely with my burgers.
