having some trouble making ravioli
the filling is waterlogging the pasta almost immediately, causing it to stick and fall apart
I tried using thicker pasta, but this resulted in a poor finished product
not sure where I am going wrong

what's the best way to lay the filling on the pasta?
I tried laying balls of filling on a flat sheet, then laying a second sheet over it
also tried laying it on a flat sheet then folding it over
also tried doing it like dumplings, pre-cutting the disks of pasta
since I was using hot mix I couldn't tell which worked better

The only way i have personally seen it done is laying out 1 sheet, placing balls of mixture and a light smear of water around the balls to help seal the top and bottom together then lay the second sheet over the top.
Press around the balls with the top sheet to remove any air bubbles then cut and press around the edges.
