Beef + beef stock + potato + carrot + celery + diced onion + 1 liter of sriracha for me

>How do you make beef stew?
Buy 3lb chuck roast, or rump roast. Cut into very large chunks, dredge in seasoned flour (salt, pepper, flour, paprika, garlic), brown all sides in batches. Sweat some onions, peppers, garlic, celery, deglaze. Add beef back to pan, carrots, whatever I want, maybe nothing more, and I hit it with a bay leaf. I add water or canned whole tomatoes to cover, or wine, dry red or something. Simmer as needed til tender. I almost always enjoy it better the next day,. which aids defatting.
Not really stew. My go to cold weather soup consists of lima beans and ground beef.
Kinda cheap, but so comforting and warm.
I do like a good mutton and stout beer stew from time to time, but I don't pine for it in freezing weather as much as the latter.

Hrm, with those lima beans, it looks a little like brunswick stew or kentucky burgoo. Looks hearty actually.
For cold weather, I usually do up a pot of chili con carne and do a cast iron cornbread for the side. Or, if I'm motivated, I'll put a bag of 13 bean soup into the crockpot with a ham hack or country ham with bone, finish it with some fresh lemon at the end. I like to have french bread with it.

Brit style beef stew at least how I was taught to make has flour or cheddar dumplings and swede chunks in addition to the usual carrots,celery and onion
