Do you guys know of a good resource that shows how long different types of food will last in the refrigerator, cooked and uncooked, before going off?

2 days for leftover cooked food, prepared salads, and the like
1 day for rice leftovers (there's a weird bacteria)
Thawed/raw meat bought from grocery? 1-2 days, but it's best to freeze it if you aren't going to use it that day
Things like opened jelly, salad dressing, raw eggs? Google it, but it's not a bad bet that once you've opened something it'll be trashed somewhere from 7 days to 6 months for a condiment that isn't pickled.

This entire post is insanely too strict, and this is coming from someone who's got some food safety certifications at a managerial level.

There are no hard-set rules for cooked food, other than they need to be gotten under 40F ASAP and not out for more than ~2 hours, particularly if you didn't have control of them before being cooked.

Refer to FDA guidelines: http://www.fda.gov/ForConsumers/ConsumerUpdates/ucm093704.htm

Most cooked foods are absolutely fine for a few days when sealed and refrigerated.

The only major exceptions are going to be uncooked vegetables, particularly leafy greens which tend to decompose quickly even when refrigerated.
