Lets talk Swordfish faggots. I don't have a lot of time but I will post pics. I was going to do a quick lemon juice soak then salt and peppers and some basil. I'm grilling it.
Sides are spaghetti squash (roasted) and something with leeks.
I'm up for ideas and I have a shit ton of ingredients, but I don't like to over complicate my cooking. So what do you think?

That actually sounds good to me. Just be careful not to soak it for too long in lemon juice. You might end up with an over done cerviche.

Yeah I know citrus marinades eventually cook meat...easy to tell in chicken joints. Thats why I'm going a quick soak and maybe a lemon garnish.

Yea the butter thing is definitely worth trying. I feel that sword fish has great texture, but it just lacks a little in the flavour department.

Def post. When you are pan searing it. Chuck a few cloves of cracked garlic. A knob of butter. And while its searing skin side down. Baste it in the melted butter.

Tilapia is worse. At least swordfish has texture. I agree though I don't get the price...I just assume it's a bitch to catch.
