IMHO, pancakes themselves shouldn't be terribly sweet. You get the sweetness from the topping you have with them (syrup, fruit preserves, etc.) But if you want them sweeter just add more sugar.

that's what im thinking but the cinnamon still tastes fine and the baking powder is in a sealed plastic bag. both were bought just before December.
if something is causing my cinnamon/baking powder to have a metallic taste, then shitty pancakes is the least of my concerns really.

i'm trying to keep as much sugar out of my pancakes as possible since it's winter and im not very active.
are russian pancakes sugar/fat packed?
they seem delicious, almost like a thicker buttermilk pancake.
i think german pancake/dutch baby looks the coolest though.
Buy baking powder without aluminum sulfate in it.
