How do you guys season your pork chops, beside regular old salt and pepper?
I've got my pork chop frying technique down, so now I wanna improve them in other ways.

Pro tip to cut horizontal scores along the fat so your pork chop doesn't curl in the pan
Add salt, pepper, paprika, and lots of rosemary to a ziplock with the porkchops. Add some vegetable oil and mix, the oil should be fairly red. It's best if it can sit together for more than an hour.

Basic salt & pepper then brown each side in a frying pan. Place browned pork chops in a baking dish, add the juice from a jar of hot cherry peppers, & some peppers from the jar. Cook at 425 for 18-25 minutes depending on thickness.

Orange juice, cumin, chopped garlic, ginger, coriander, salt and pepper, and lime. Make a marinade, then either bake them in marinade or fry them and use some marinade that wasn't sitting with the raw meat after for a glaze.

Apple cider vinegar (or a very dry cider), honey, dijon mustard, a pinch of salt. Reduce until it's a sticky glaze and serve as is or brush over the chops and throw them either back in the pan or in the oven to caramelize.
