It's cheaper wholesale than leaf lettuce because it can be made with blemished leaves, trimmings, etc and thus a solid choice of any fast-food outlet looking to make their food costs as low as possible.

Add some crispy and fresh texture as well as fiber. In many fast food places and other restaurants, you get shitty old lettuce that is pale white, tastes like a refridgerator wall and has shitty texture.
