Sous vide machines circulate the water. You're going to get hot/cold spots. It's a lot more than just temperature control.

Learn 'best practices' and cook with traditional ingredients and you will blow people away with far less than half the effort this gadget based fuckery requires.

This is why I don't want to dump five hundred dollarydoos into a dedicated machine. A temperature controller is cheaper.

do you have a regular thermometer already? just put a heavy Dutch oven full of water on low heat and use the thermometer to get the temp right. this works fine for me, although I did just buy a thinkbird temp controller for $35 as well. I may use temp controller for other purposes like a fermentation box or dough proofer.
