How do I make venison burger without adding in other animal fats? I have big hunk of ground venison and want burger but apparently venison's fat content is insufficient for proper burger.
You really can't. Wild venison fat is like candle wax, you'd be better off using beef tallow. You won't regret it, trust me.

most grocery stores don't grind meat in house, you either have to go to a butcher or a nice grocery store. And even then if you ask for ground chances are they only have lean scraps, you can go to a butcher and ask for some beef fat or pork fat ground and add that in, but realistically you arent going to get enough fat for the burger.
What you could do is get bone marrow and mince it up really fine, that will add the fat and flavor you need.

It'll be ok if you get enough saucy stuff on it. But for a burger you'll want more fat.
