Where I live Sturgeon is strictly catch and release. A new "sustainable" cavier farm opened recently and they have started selling canned surgeon meat as well

Haven't tried it. I've only ever had salmon roe and I didn't like it. I know sturgeon cavier should be miles ahead, but I'm a poor Uni fag
