A trully great website with a lot of excellent recipes: meatsandsausages.com. Their information is accurate and they'll keep you safe if you follow their instructions. I've made a number of their recipes and they've all been good. If I remember correctly, I think they have a jalapeno sausage recipe.

Every year at Christmas my family makes 100 lbs of sausage. Usually it is split between Italian and Polish, with a small batch of something experimental.

Do you smoke your Polish? Mine are simple, just garlic and marjoram. Then I smoke them for a couple hours @ 160F.

No, I would like to try, but I don't currently have a smoker. My recipe is just garlic and mustard seeds, no marjoram, mostly because it is an older family recipe that I can't be bothered to change.
