>Not buying DMT diamond stones off amazon, then buying your polishing waterstones at a local woodworker's supply.
You goof'd man, diamond stones are way quicker and better for all but final polishing and most kitchen knives at the mid and low end won't take a decent polishing half the time because they're made of average steel.
I've sharpened a lot of shit and I'll tell you that waterstones are terrible if you want to regrind a knife, change its profile or relieve the back end of the tip.
Do yourself a favour and go for a double sided daimond stone and maybe a 4000 grit waterstone for polishing if your knife is made of good enough steel to justify it.
