Well trained in doing tricks. What they make is usually pretty simple and straightforward disregarding the tricks. Getting the food fresh off the hot table is very nice, though, and it's fun to watch them work.

Depends on how much is improvisation/creation and how much is repetition.
Most chefs follow the training (plus budget and sales) a good 80-90% of the time.
At the very least, they're trained performance culinary artist monkeys.
