Bottom and middle two pieces are front leg part of thigh and upper calf. They're tough. Ground or braised several hours. The top piece might be a piece from the back thigh - hard to tell. I'd just mix it in with the front leg portions. But cut out that fat, not because I'm a diet fag, but because it tastes like shit.
