Either or, depends on preference.
Processed cheese works better as other cheese is usually sliced too thick.
Tangy mayo if you can find it, I know there's differences in Mayo taste from country to country.

Was shown it from my New Zealander friends as a kid and it's been a guilty treat ever since.
