Buying local is great if your local roaster has a wide variety.

I've found many in Southern California do not. Too many of them stock "bright"/highly acidic coffee and sell it on their shitty, confusing websites.

I know there's one roaster that does everything through email and paypal transactions.

In the UK I was using pactcoffee.com, you get 250g for £7, shipping included (I believe, but not sure now) and you can have them deliver the whole bean or they can grind it for you. Tons of variety, there's always something good in there.

I've been thinking of trying some of Pact's stuff.

I'm currently buying most of my beans from Extract or Colonna because they're both not too far from me. The latter even has starting making nespresso capsules - I know a lot of people frown on them, but their ones are seriously worth a try.

It doesn't go rancid what are you talking about? It loses its top flavor potency from the ephemeral oils evaporating and oxidation over the course of 2 weeks. Even around a month it is still tasty but not ideal. After a month it is definitely finished.
