Think about it, what is sour cream? It's cream that's been fermented by a particular type of bacteria. So this bacteria has already colonised the cream, making it really hard for other microorganisms to grow.

This, by the way, is exactly why sour cream used to be made: before the invention of refrigerators, it allowed you to store cream for much longer.
