How do you prepare sausage in a way that it can be refrigerated and eaten cold the next day, without any of the disgusting congealed fat that you'd get from frying it? Bake the sausage? Boil the sausage?

Any method you want, even frying. Just drain the congealed fat before refrigerating. Put the sausages on a wire rack, in a colander, or on absorbent paper after cooking them so the grease is drained away. Then refrigerate.
