but i like mine medium rare. though my very favorite way to consume beef is carpaccio, which is just raw. so taste

Rib eye - medium / medium rare with caramelized onions
Tenderloin - rare as a carpaccio with some rucola and olive oil
T- bone and rumpsteak - medium just with butter and a bit of garlic
Flank steak - medium with homemade bhut jolokia hot sauce
