Try adding nuts or seeds instead of cheese, limited use of oil may also be an option for gaining weight in a healthy manner.
The fat in cheese is 2/3 saturated fat and it's not a good idea to gain weight on a high saturated fat diet. Plant fats are usually around 1/6 saturated fat
