Las Vegas is one of the biggest tourist cities period. If it has thousands of reviews and is above 4 Stars it can't be bad.
All I know from Vegas is L'Atelier at the MGM and it's wonderful. Will be high end though so be prepared.

Definitely go to Peppermill while you're out there. Old-school Vegas hangout with an enormous menu in a lounge setting. The portion sizes are huge and the food is excellent. I can't wait to go back there next year myself.
As far as buffets go Vegas is a whole city of them. If you want a huge one I would recommend MGM Grand.
Vegas actually has an excellent Chinatown/Korea town/Little Tokyo district and you can find some great sushi if you look. Just go by top rated in Yelp and I guarantee you'll find something good. Great ramen there, too. Go to Monta Ramen.

Sushi Kaya is a great ayce sushi restaurant off the strip that's open late. Sterling brunch at Ballys is $90 but worth it in my opinion for the relaxed atmosphere and all the perrier jouet you can drink

Just checked to see if it was still in business, but there's this place I visited ~3 years ago called Yama Sushi. Quaint and not a high-profile location but their AYCE menu is only $13.00 per person and they have a crazy selection of ingredients.
