Things to do with pork belly?
I just made some stir fried pork belly with a gochujang sauce, and yesterday I deep fried it and tossed it in a sweet soy sauce kinda of creation. I have a lot of Korean ingredients so that's usually my go-to.

Cure it. Mix 1/2 salt, 1/2 brown sugar and put the pork in it. Let it sit in there for about five days. Then take it out and hang it in cheese cloth for at least a week (but as long as you want).
It is the most delicious meat candy.
braise it

Can confirm, that recipe is great.
Any leftovers are god-tier drunk snacks when you get back from the pub too. Meat, fat, crunch and salt all in cube form, it's science.

I'd be worried about somehow messing up the salt crust
