What's the worst that can happen if you leave a pot on the boil and forget about it forever? Like, leave it on for 24 hours or something. Is it possible for a stainless steel pot to melt?

Not melted, but I destroyed one that way. Surprised there was no fire... It turned into carbon or something black...

No it won't melt, a stove plate doesn't become hot enough for that. But I guess your stove will get broken. If you have any plastik parts near the stove than they will melt and eventually burn down. But most modern stoves have a fuse for such cases anyway.

You'll ruin any coating the pot has. If you're lucky, you'd be able to sand the burned places off and polish the remainder.
