Does anyone have a recipe for these types of fried spring rolls?
What kind of dough should you use?
you have to buy rice paper
It looks like won ton dough.

Isn't that for the steamed kind?

It's too confusing to think of Spring rolls, Summer rolls, egg rolls, pancake rolls. Calling OP's pic spring rolls is perfectly legitimate - they're literally called spring rolls in Chinese too.
They're not made of won ton wrappers though. The spring roll wrappers are actually thicker so they don't puff up like the wrappers on crab rangoons (which are made from won ton wrappers). I buy them.

They are called "egg roll skins" more common with Vietnamese cooking
Spring rolls are rice paper aka the white see through ones
Chinese eggs Rolls are more towards the ticker skins but some use the thinner ones

In Poland we call the rice ones "Sajgonki" (Saigon's) for the Vietnam style, and the egg ones are "Krokiety wiosenne" (Spring Croquettes) for the Chinese ones...Because everything that is a pancake, has meat and vegetables and its rolled is a croquette..
