I would mix exotic spices from African and Indian cuisine with American BBQ. Fusion is all the rage this decade, but I think even the sushi slurping hipster whores are getting tired of nothing but Asian food. I would hire expert pitmasters from around the world to team up and come up with new ways to do BBQ. If it works out, the possibility to turn it into a chain is real. Flyover loves BBQ, coastal cunts love pretentiousness. This could work anywhere.

We serve pretty normal food but it's all themed on horrible events from history/recent history.

You walk in and see a series of chefs sitting on chairs. You can inspect them, ask them questions, read their CV etc. Then you choose the chef you want and pay them an hourly rate to cook for you.
The chefs can either suggest menus for you, or you can have them cook special requests for an extra price. The exterior is just a door with a red light over.

The best part is on the other side I run a ""restaurant"" that actually is a brothel in disguise.

I would jizz if a place like that opened near me, and travel cross country for it if not. Would need to go to great lengths to ensure food quality though, otherwise it's just a hot sauce shop with shitty food to test sauces on.

Gimmick restaurants almost never last. You're better off just doing a solid rotating menu of a few dishes made well in a place with a nice atmosphere and good staff.

Ok what if it was a food truck that just served wings, chicken strips, homemade chips etc. that didn't take up much space in the truck but your gimmick was that you had an exhaustive offering of hot sauces? Maybe offer the choice to blend sauces and some kind of challenge hot wings where the person that takes it down can come up with their own blend to be put on the menu.

There's a couple places like this around Chicago. They're not really focused around the sauces necessarily but they provide a really wide selection.

I found this stuff at Chicago Bagel Authority and ended up buying a bottle on the way out (though I'm not sure they're even supposed to sell just the hot sauce).

Nah, what you do is have a list of single cuisines, then you randomly choose two of them every day (obviously this would be done weeks/months in advance to plan out what kind of ingredients you'd need on hand). Each cuisine would have its own menu items that would be sold on its days, and each pairing would have unique menu items only sold on days with that specific two-cuisine pairing.

...is a seasonal trend-hopping casual, order-at-the-counter restaurant. The "seasonal" menu, in fact, changes with whatever is currently trendy. For example, at one point we would have served cake pops; now we serve cronuts or mirror glaze cakes or whatever is currently popular for dessert. (Part of the budget in the business plan is trend analysis.) For savory fare, we would currently be serving bowls of rice or other "starches" with a choice of "protein" and "veggies".
