i like those categories. any comment on this:

curry:
- yolk, mayo, curry powder, lime juice, cilantro?

spicy:
- yolk, mayo, mustard, sriracha, candied bacon + jalapeno

herb:
- mayo, dijon, dill, cucumber

regular:
- mayo, regular mustard, pickle

should i be using regular ass mustard for the normal ones? dijon? something different?

-curry should have all those ingredients plus some cayenne and a very VERY scant pinch of ground cloves, cardamom, and cinnamon

-take that goddamn bacon out of the spicy, use chipotle powder or liquid smoke instead, top with smoked paprika

-herb needs some thyme and sage, use dijon with this one

-regular's good with plain yellow mustard, maybe a little splash of vinegar too
