i needed 1.5 lbs of lamb for a recipe but i could only get it in 1 lb increments, so i had 2 lbs. used what I needed, what should I do with the other .5 lbs?

Actually that is a pretty damn good idea.
Cut into small pieces, fry up with peppers and onion: lamb fajitas. Granted that's just my usual approach for any meat.

A small amount of lamb combined with pork or beef makes a meatloaf that can be spiced like gyro meat (greek profile, so buy Cavenders or mock up your own:marjoram (not optional!), thyme, oregano, garlic, pepper, maybe a smidge of cumin, rosemary or a bit of bay if simmering something).
Pat out your gryo meatloaves into patties and bake like burgers, bake, and park cooked burgers them in the freezer until you're in mood to rebrown them and make a nice sandwich or top a salad.
