What can I prepare as a general meal? Cheap is great but fuck it, not a requirement anymore.

Pretty much the same way every time because it takes way too much effort to turn them into hashbrowns and I don't have anything to mash them with.
Diced+fry+add eggs/vegetable/cheese
You got a crockpot? If not invest in a big one, that way you can just dump a pork butt and some sauce in it and let it sit until you have pulled pork that will last you for days.
Or do the same thing with chicken breasts and buffalo sauce, or beef stock/chuck/pearl onions for tips and rice. The possibilities are endless.

You gotta mix it up. Invest in something to mash your potatoes. Start using different potatoes like red skin potatoes. Personally I think mashed red skins with butter salt and pepper are the shit. Also sweet potatoes are great to switch to to change it up every now and then.

Then stews are your best bet, you can do those easy without a crockpot. Sear the meat and the aromatics and veg, add stock, simmer on low until fork tender, season to taste.

I usually buy whatever's on sale but my favorite is to get a big hunk of chuck and cut it into cubes, season and flour, sear and brown some onions (or mushrooms, garlic, whatever) in the leftover fat, then throw everything in a pot and cover it with beef stock. Get to boiling and reduce the heat until it simmers (adding more stock or water as needed), leave it for around 4-5 hours or until it starts to fall apart but isn't completely shredded.
Then do a dark brown roux in a separate pan and add the majority of the stock, cook it into a gravy, season and add it back into the pot, reduce to your preferred thickness. Serve over your favorite starch, it's good shit.
