If it's between only medium and well done, medium. Ideally for me medium rare. Cooked in herb butter with garlic and rosemary. Mashed potatoes, asparagus, sauteed mushrooms on the side. Damn now I am hungry. Fuck you OP.

If I know that its good meat: Blue-rare. If am I not sure: Rare or Medium-Rare

Medium-rare. Honestly it gives the best amount of crust, flavor, and tenderness. Look into sous vide cooking, its so worth it, and provably the most delicious way of cooking a steak. A close second is cooking it in the oven to temp. Both finishing with a sear. Don't let idiots try to tell you otherwise bwcause they like to act like hust searing it makes them a better cook. Anyone can cook a steak, just do it the way that tastes best, whcich is sous vide.
