The minerals in different types of salt are what makes them different. You'd have to have a very acute palate to be able to tell the difference by taste.
I use rock salt, either Himalayan or Hawaiian, for my salt mill (it makes a fine powder of salt that is good on popped corn or deep fried potatoes) and Diamond Krystal kosher salt for most everything else (I like the feel of it and can pinch it and measure it by feel because I'm used to it's consistency).
