word of god is he does it to support his fine dining restaraunts. Fine Dining, because it's so cost intensive and depends so much on whales (I don't mean the ocean kind, the rich kind) and other factors, tend not to be profitable. Like, at all.
His restaurants lose money, his brand makes money.
Also he has a family, and families are expensive.
