Mackerel is fantastic just grilled with a bit of chilli oil rubbed on until the skin is crispy. Or if you have a heavy knife, chop them into inch thick steaks, dust them in flour and fry.

I'd fillet it and fry it very quickly, serve it on a baguette with red onion slices, lettuce, chilli flakes, plenty of sumac and some olive oil.

This, fuck yes. Gotta have that awesome crispy skin.
They're also good smoked. Reminds me of being a kid hanging with my uncle in Denmark. We'd go to the harbor and watch the boats come & go while eating smoked mackrel (they'd smoke it right next to the dock) & drinking Carlsberg. Good times.

Chopped ginger and garlic in a little peanut oil. Add pinch sugar, rice wine vinegar and white miso. Stir in just enough water until it's a thick sauce. Add mackerel fillets cut into bite size chunks and gently simmer. Serve with rice and a green vegetable.
