Red wine is too tannic (leathery tasting) to make sense as part of a sweet recipe. (Unless it's one of those awful, grandmotherly, mothball-ridden Christmas fruitcake things. Gag.)
But rum would be more in keeping with the tropical ingredients, if you're keeping it thematic.
