Why do all chinese noodles have this sort of weird chemically sour flavor? Is it some weird ingredient? Also general noodle thread. Nissin "spicy" tonkotsu is my current comfy noodle desu

It's the ingredient of millions of Chinese children who didn't get 100% on their university level calculus test, even though they're in Grade 1.
Anyone else seen or tried this brand? I bought a roasted duck flavor one from an Asian supermarket and it was actually really good. The noodles have a nice springiness to them, and the broth has great flavor.

I also have another brand of Vietnamese noodles that are sate onion flavor, haven't tried em yet. Lately the Asian market has been getting in a lot of noodles and other products like snack foods I've never seen before, it's nice to see some less common brands and try new stuff out.
When it comes to that weird chemical flabor, all I can say is this, I know in Japan ramen noodles are alkali. That might be what you're tasting there. Last time I made ramen noodles I used alkali salt to get the right flavor profile.
