Lazy man's Chicken and Dumplings. I threw six cut up thighs, fresh sage, a large can of Cream of Chicken soup, a couple of carrots, and an onion in to the crock pot on low for six hours. Then I added one cup of frozen peas and one package of cut up Grand Junior's Buttermilk Biscuits and cooked for another 45 minutes. Cheap, easy, and pretty tasty...

I do this all the time, nothing wrong with that.
I usually use breast though, since it's quicker and I rarely leave my crock pot on for a full day.
I personally prefer to add a normal can of chicken broth with that, because I prefer it to be a little soupier.

Sounds pretty good but I don't think I'd personally add biscuits to the crock pot. Imo it would make more sense to bake those and just add them in or have them on the side - but then that's not really chicken and dumplings is it?
