But what's the kind of lettuce you get on good burgers?
It's not iceburg lettuce afaik. it doesn't taste or have the texture like shit.

Depends on the burger. Different greens have different characteristics, which make them good on different burgers. Arugula (or, if you want to go more extreme, nasturtium leaves) are peppery and spicy, and can cut the richness of a heavy burger. Butter lettuce is soft and delicate. Romaine has a watery, crunchy texture. Leaf lettuces are flavorful and medium-textured. You could also go with other things, like sorrels (sour), mustard greens/mizuna (again, spicy), herbs, or the leaves off young vegetables.

I don't know what lettuce goes on most good burgers, but my favorite lettuce is red leaf and I put it on burgers whenever I make them at home.
